Had a rough 2 or 3 weeks lately and yesterday, my 1 day off..i was so exhausted I couldn’t do ANYTHING. I barely ate…just super tired and wanted to not do anything. Don’t like pushing myself quite this far down to the bone…you lose yourself. I turn into a frikn chef robot. I don’t get to see my girlfriend or the pups, I don’t get to relax, I don’t get to enjoy something new or discovery something, it’s just go go go til all the food is out. Then it’s go home, orders, work on new menu, plan my chefs event. All the while..i just miss the one I luv and want to spend some slowed down time with her. It’s my fuel. It gives me my energy and my will to do what I do everyday knowing I don’t get to see her much. It’s the sacrifice I’m making now to be able to enjoy time with her in the future.
After a day of me barely thinking about food at all I felt like I needed to come back in strong today. I did. And I came out wit this dish..Shot right out front of the restaurant on this nearly first day of Fall. Thought it looked pretty appropriate for the time of year too.
